Nice Cream Dreams

One of the best things about being vegan is enjoying ice cream for breakfast. But, this isn’t the typical ice cream. This is more like nice cream, because it’s so good to your body. I especially love it because it is so easy to make and requires so few ingredients. Below are my current favorite recipes. 

Banana Dream

  • 2 large ripe bananas, cut into pieces and frozen

Blend frozen bananas in a blender for a smoothie consistency or pulse for an ice cream texture. 

Apple Pie

  • 2 large ripe bananas, cut into pieces and frozen
  • 1/4 cup of Apple butter 
  • 1 teaspoon cinnamon 
  • 1 teaspoon vanilla extract 

Blend frozen bananas in a blender for a smoothie consistency or pulse for an ice cream texture. Add Apple butter, cinnamon and vanilla extract and continue to pulse until well mixed. 

Berry Blast

  • 2 large ripe bananas, cut into pieces and frozen
  • 2 cups of frozen mixed berries 
  • 1 teaspoon vanilla extract 

Blend frozen bananas and mixed berries in a blender for a smoothie consistency or pulse for an ice cream texture. Add vanilla extract and continue to pulse until well mixed. 

Choco-Banana 

  • 2 large ripe bananas, cut into pieces and frozen
  • 1 tablespoon unsweetened cocoa powder 
  • 1/4 teaspoon vanilla extract 

Blend all ingredients in a blender for a smoothie consistency or pulse for an ice cream texture. Top with a sprig of mint.
